As an acupuncturist, I’ve known about the health benefits of cultured veggies for years, but I’ve always been intimidated by the process of making my own. I thought it might be too time consuming and messy.
The first time I saw Lani’s presentation on how to make cultured veggies at home, I was totally inspired by how passionate she is about making and eating the cultured veggies, and I tried it immediately with great results. I’ve followed her instructions faithfully for the last two years and never ended up with a “science experiment.” Every batch has tasted different than the last, but they’ve all been great.

Honestly, I eat cultured veggies just because I love them, but I’ve definitely experienced the side bonus improvement in my overall digestive health since regularly incorporating them in my diet.

Last fall, my husband and I invited Lani and her family to our Acupuncture Center for two presentations (with standing room only!) on how to make cultured vegetables, and I think the whole audience was totally surprised how easy the process can be. In addition, Lani showed how she makes the preparation a shared event for her whole family. The presentation was dynamic, fun and inspiring! Both her boys and her husband helped out, and because they participate they are also enthusiastic about eating the veggies. What a great way to get the entire family healthier!

Because both my husband I work full-time, we don’t always have the opportunity to make our own veggies, but that’s OK because Lani always has some in stock – I have tried all the different blends and really enjoy them all. Although the Blue Blend may have slightly edged out the others as my personal favorite. :-)

As Acupuncturists, a huge part of our jobs is coaching people on how to make better choices about diet and lifestyle. Digestive health translates directly to the health of the immune system. Besides eliminating sugar, soda, processed foods, caffeine and alcohol, eating cultured, lacto-fermented foods is one of the most important things we can all do to dramatically improve our health and the health of our loved ones.    These little gems are magnificent. My naturopath recommended I give them a try when I was struggling with an infection in my small intestine and had an overgrowth of yeast. I started out eating them along with my scrambled eggs and found I almost couldn’t eat a meal without them. I have had yeast related problems my entire life, mostly due to frequent illness as a child (strep throat, ear infections), and bronchitis as a teen, therefore, I took a lot of antibiotics. As a pre-teen, I had fungus on my toes, and the foot doctor did not know what it was (this was before Candida was identified). As a young teen, I had frequent yeast infections due to antibiotics.
   Candida related problems that I’ve had since my 20s and before eating cultured vegetables were chronic sinusitis, gas and bloating upon eating, poor digestion, headaches, nausea, and skin rashes.
    Since I’ve been eating cultured vegetables and Kefir, I don’t crave chocolate; have much better digestion, fewer headaches and sleep better. My skin is brighter and clearer.
    Lani has been very helpful in answering my constant questions of how to eat the vegetables, when to eat them, and how much. The taste was even easy to get use to.
    Recently, because of my lack of sugar craving and getting my digestion system balanced, I am finally losing weight.

    My son and I love the Cultured Vegetables. We eat them like salsa, with organic chips or pita. I would describe the taste as being somewhere in between salsa and sauerkraut. I can feel good about filling up on them because I know I’m doing something good for my body. I firmly believe that food is medicine and everything we put into our body matters. I also believe that a healthy digestive system is at the root of good health. As I eat the CV’s I can feel good about slowly undoing some of the damage that years of pasteurized/homogenized milk, antibiotics, additives and preservatives have done to my digestive system and my body in general, preventing me from getting disease. ~ H.
